"Staying Healthy Today Interviews..."

"Health Benefits of Solar Cookers, Water Pasteurization and Portable Microbiology Laboratories - An Interview With Dr. Bob Metcalf."
Bob Metcalf, Ph.D., microbiologist at CSUS, shares his 3 decades of experience using solar cookers personally, and world-wide in developing countries, especially in Africa. Solar cookers, or Cookits, save not only energy, but also help prevent the 2lbs per person of firewood to be gathered each day saving time, forests, preventing soil erosion, improving health and safety from  not only wonderfully cooked food, but avoidance of smoke exposure and the danger of gathering wood in unsafe environments. Solar cookers can easily purify/ pasteurized water from the sun by heating water above 149 degrees fahrenheit. While solar cookers are an ingenious simple device that can replace wood-based fires for cooking the greater genius of Dr. Metcalf is the production and testing, with his students, of the Portable Microbiology Laboratory, which can teach local villagers to test their own water for pathogens in 3 hours, empowering the local citizens to not only test the water but then purify it with solar cookers or chemical treatment. This break-through surrogate pathogen (E. Coli) quantification by the local people and water pasteurization, is a major health break through since 40% of hospitalization in these African countries is due to infectious diseases. Dr. Metcalf's great passion is to bring this Portable Microbiology Laboratory testing to local citizens world-wide to eradicate infectious disease from impure water. This scientific breakthrough will do more for health improvement than any drug therapy (or vitamin for that matter). The knowledge of the Portable Microbiology Laboratory needs to be spread world-wide not only to local people but also to government public health agencies, international water organizations and conferences, and the World Health Organization. I encourage you to listen to Dr. Metcalf's inspirational interview (or read the transcript) and to support Solar Cookers International (www.solarcookers.org) or contact Dr. Metcalf at bobmetcalfCSUS@yahoo.com / rmetcalf@csus.edu

"Diabetes Reversal with The McDougall Program - An Interview With John McDougall, M.D."
Dr. McDougall shares his 30 years of experience with a low-fat vegetarian starch-based diet on the prevention and reversal of diabetes. Dr. McDougall emphasizes the important role of starch-based diets in all successfully living societies and cultures historically. While fruits and vegetables are allowed on his program, starched-based foods such as beans, squash, potatoes, whole grains, pastas and corn are of greater emphasis. Diabetes (type 1 ½ and 2) that come from excess calories and insulin resistance is a "curable" condition as far as Dr. McDougall is concerned as long as the pancreas has not been too damaged over years and is still producing enough insulin. His residential programs allow the individual to consume generally unlimited quantities of the whole starchy foods mentioned above. Medications being taken by the patient are the greatest risk of side effects from his program because of rapid reduction in blood sugar, lipids and blood pressure which will cause significant side effects from the patients medications if their dosages are not reduce initially and followed-up upon. It is not infrequent that these medications are stopped initially upon entering his programs or dramatically reduced. Dr. McDougall feels that in insulin resistance medication reduction of blood sugars to levels considered "non-diabetic" are harmful to the patient and sites recent studies supporting this statement. Dropping blood sugar rapidly by diet alone is not harmful (unless medication side effects are involved). Dr. McDougall's experience with high starch-based diets preventing, reversing and curing diabetes eliminates the current paranoia of "carbs." Dr. McDougall's interview is a must listen (or read) and is currently posted on the home page at www.prescription2000.com. Dr. McDougall has a wide range of educational resources available at

Upcoming Interviews In September 2009...

"Alzheimer's Disease Treated With A Novel Nutraceutical Formulation Improves Cognition and Mood - An Interview With Dr. Thomas B. Shea."
Dr. Shea shares his years of research regarding the causes of Alzheimer's disease involving genetics, environment and diet. Dr. Shea has developed and has licensed a product called MemoryXLTM which includes folic acid, vitamin B12 and alpha-tocopherol and the nutraceuticals S-adenosyl methionine, N-acetylcysteine and acetyl-L-carnitine. These substances in combination improve cellular energy production, provide antioxidant protection and improve methylation, a critically important cellular metabolic process in our bodies. Dr. Shea shares the positive results of his studies.

"Heart Attack Proof" - An Interview With Dr. Caldwell B. Esselstyn, former Vietnam Army Surgeon and internationally known Cleveland Clinic endocrine and breast cancer surgeon speaks of his 20 years of experience reversing heart disease with a low-fat, predominantly four food group diet of beans, whole grains, vegetables and fruit. His ground breaking book is Prevent and Reverse Heart Disease.

Asthma - 9 Things You Can Do....
I was sitting in a conference this past weekend listening to an allergy specialist review statistics on the health burden of asthma, so I thought I would share a few simple ‘pearls' to help you or a family member with deal with their asthma.
1) Eat off the Basic Elimination Diet (BED) or eliminate dairy products totally for 1 month.
2) Sinus rinses at least once daily.
3) Clean up the home environment, especially the bedroom (no pets in the bedroom, bed and pillow covers, HEPA air filter, etc).

4) Vitamin C 1000-10,000 mg/d (to bowel tolerance), magnesium 300-500 mg/d , vitamin B6 50-100 mg, vitamin B12 500-2000 mcg, N-acetylcysteine 500-1000 mg, and a multivitamin/ mineral supplement.
5) Take a probiotic - 10-20 billion bacteria.
6) Do a comprehensive stool exam and treat any overgrowth of bacteria or yeast accordingly - or if the history suggests (lots of antibiotics, sugar cravings, GI complaints) do a therapeutic 2 week trial of an antifungal agent(s).
7) Practice deep abdominal breathing using the abdomen on a regular basis (5-10 minutes per day) and get exercise.
8) Look for stress or emotional triggers, especially if a child.
9) If appropriate taper your medications slowly consulting with your physician. Do not stop them suddenly. Start with the ‘quick acting' drugs first (i.e. albuterol) then go to the anti-inflammatory drugs (steroid inhalers and nose sprays), then MAST stabilizers (cromolyn sodium) and leukotriene antagonists (Singular).

Until next time Stay and Be Well
